Caramelized Rainbow Carrots

Great for adding some veggies to your meal, this tasty side can be on the table in under 20 minutes.
Ingredients
Herb Oil:
- 1 bunch tarragon
- 1 bunch chives
- ½ bunch Italian parsley
- 1 tablespoon chopped oregano
- Zest of ½ orange
- 1 teaspoon kosher salt
- 1 cup olive oil
Caramelized Rainbow Carrots:
- 1 tablespoon extra virgin olive oil
- 2 bunches rainbow carrots, trimmed, peeled, halved, and cut into 4-inch sticks
- ½ teaspoon kosher salt
- ¼ teaspoon cracked black pepper
- ¼ teaspoon granulated sugar
- 2 tablespoons herb oil
Preparation
To make the herb oil, place all the fresh herbs in a food processor and pulse to chop. Combine all ingredients in a large jar, cover, and shake vigorously to combine.
For the carrots, heat olive oil in a large skillet. Add the carrots and cook, stirring, until carrots are browned all over and tender. Stir in the salt, pepper, and sugar. Toss with herb oil and serve.
