Mashed Potatoes

The secret to perfect mashed potatoes is in the oven! While boiling may oversaturate your spuds, baking dries them out so they can soak up more buttery goodness while keeping a creamy texture.
Ingredients
- 4 pounds large Yukon Gold potatoes
- 4 ounces butter, melted
- 8 ounces heavy cream, hot
- 2 teaspoons salt
- ⅛ teaspoon white pepper
Preparation
Heat oven to 400°F.
Bake potatoes until soft, about 60–80 minutes. Remove from oven and let rest 5 minutes.
Cut potatoes in half, then scoop out the flesh and press through a food mill or mash with a potato masher. Add butter and mix thoroughly. Fold in cream, then season with salt and pepper.
