Pan-Roasted Salmon

First seared on the stove then finished in the oven, this simple salmon preparation is the perfect balance of crisp and tender.
Ingredients

Preparation
Preheat oven to 425°F.
Heat a large nonstick, ovenproof frying pan over high heat, then add olive oil and heat until just before it smokes. Season salmon with salt and pepper, then place into the hot oil skin-side up, placing fish away from you to minimize chances of oil splatter. Sear until fillets start to brown, about 2–3 minutes.
Place pan in the oven and roast for 5 minutes, or to desired doneness. Remove pan from oven and remove salmon from frying pan, being careful to keep crusted presentation side intact. Serve skin-side down, garnished with sliced green onions or lemon.
