- 1 head garlic1 head garlic 1 head garlic
- 1 teaspoon olive oil1 teaspoon olive oil 1 teaspoon olive oil
Baked Brie:
- 1 wheel (8 ounces) brie1 wheel (8 ounces) brie 1 wheel (8 ounces) brie
- ¼ cup chopped Kalamata olives¼ cup chopped Kalamata olives ¼ cup chopped Kalamata olives
- ¼ cup chopped roasted garlic¼ cup chopped roasted garlic ¼ cup chopped roasted garlic
Preparation
Preheat oven to 400°F.
To prepare the roasted garlic, cut the top half off the whole head of garlic. Place both halves in a pie plate or similar baking dish, then add ¼ inch of water. Drizzle olive oil over the cut ends of the garlic, cover dish with foil, and fold the edges over to seal.
Roast for about 30 minutes, until garlic is soft and golden brown. When garlic is cool enough to touch, squeeze each clove out individually and chop.
For the baked brie, use a serrated knife or unflavored dental floss to slice the top rind off the wheel of brie. Place cheese cut-side up on a baking sheet and top with olives and roasted garlic.
Bake for 6–8 minutes, or until cheese is golden and bubbly.
Serve with crusty bread, tart apple slices, or your preferred accompaniments.
